Eating Vegan at Seattle Retirement Home

Here I am eating a delicious salad at dinner in our dining room. I really wanted to eat more vegetarian and our chef has agreed to serve vegetarian choices, along with the usual rare. I especially like the tofu dinners. Everything is so fresh and tasty. Eating healthy is a big part of staying young and feeling good. My desserts are limited to 2x/week and diabetics have incredible choices! MY dessert will be some mini-exercise bike pedaling--yum! After dinner I always grab a banana and at lunch an orange. Lots of fish on the menu, so there is always a healthy choice and much variety. Excuse me, dinner time!
